
Organic curry rice with tofu & vegetables. Yum!
After a long day for the boys and I, we looked to the pantry and the fridge to see what we should have for dinner. The winners were no fancy stake or long laboring meal. We decided to use the organic tofu and saute it in some organic olive oil and curry. The aroma filled the entire house and just made everybody hungrier. We had some prepared rice so we took that aside. Added some fresh, sweet, red peppers, onions, peas, then just a little touch of shredded apple and some raisins. Sauteed that together with the rice and added a little sea salt, pepper, and more curry, we like spicy stuff. Added Our tofu, mixed it in and viola! Just like that we had a simple, healthy, flavorful dinner.
The boys wanted some bread so we added a slice of spinach focaccia bread; and to drink? I had already prepared some of my fresh pineapple water, ‘Pineappleish’ and blended it with fresh strawberries. Everything was enjoyed and as always there is NO pineapple water left for tomorrow, this is why I bought the second pineapple…








Its so cool to create dishes like that. Never thought the raisins would make that a good meal, but sounds like it worked and made a wonderful dish.

Oh that looks delicious and it’s so colorful too, occasionally I add fruit to my stir fry dishes.
Not sure if you know but you can change the taste of your tofu by marinating it with whatever you want it to taste like. We don’t eat tofu a lot in our house, but the times I have purchased it I press it (to remove the excess water) and I marinate it with spices and sometimes soy sauce. I then add it to the freezer and bring it out whenever I’m going to use it.

You know, I was always under the impression that tofu should not be put into the freezer, so this is good news! I have not tried marinating it yet, we don’t use it often and was always afraid that if I didn’t use it in time it would go bad and be wasted. Of course now that I know it can be frozen, I will definitely try it!

Yes, it can be frozen. I usually buy the extra firm tofu. I usually take it out of it’s packet, remove the excess water, marinate it and put it in the freezer. When I’m ready to use it, I pull it out and put it in whatever I’m going to make.
